My approach to creating recipes always starts with 3 major considerations: (1) quick prep time, (2) easy to prepare, and (3) affordable ingredients. I also prioritize foods that are accessible to people in low income communities, but unfortunately there will be people who don’t have access to fresh fruits and vegetables, so they will have to travel to get access to healthier foods. I love this Vegan Pasta Salad recipe because the ingredients are simple, and it’s easy and quick to prepare. With minimal effort, a delicious, satisfying meal can be prepared that serves six people and is more affordable than most takeout food.

Directions

Cook noodles according to the directions on the package. Place the cooked noodles in a large bowl. Chop the broccoli, green pepper, red pepper, cherry tomatoes and red onion and add them to the bowl with the cooked noodles. Add the Italian dressing and mix until well-blended. (Tastes best when the flavors are able to blend). Enjoy!

Other veggies can be substituted, like cucumbers, zucchini, yellow squash or black olives.
